THE INSPIRATION
Our adventure into the world of truffliculture was inspired by the love of provincial France; the countryside, its exquisite architecture and rustic allure, the art of creating gastronomic delights, and savouring them alongside fine French wines. As we bid farewell to our tree farming venture and embarked on a fresh agricultural journey, truffle cultivation emerged as the perfect fit. In 2021 we planted 1300 Oak, inoculated with Tuber melanosporum, the prized French Black Truffle

The rich history of truffles, is a centuries old tradition, dating back to ancient Greece and Rome, where these aromatic fungi were cherished as aphrodisiacs and savoured by emperors. But it was the during the Renaissance that they were elevated to luxury status and emerged as a prized culinary gem.Â
MODERN TRUFFLE CULTIVATION:
A Culinary Revolution
In the early 20th century, a culinary revolution unfolded, with the discovery of techniques to cultivate truffles, harnessing the natural symbiosis between truffles and trees, mainly Oak, beech and Hazelnut. This innovation transformed truffle production from forest to farm, enabling cultivation on farms worldwide, ensuring their place in modern gastronomy.
The Aroma and Taste of Truffle: A Culinary Delight
Truffle’s taste is an exquisite fusion of intense aromatics and earthiness, featuring notes of garlic, mushrooms, and delicate nuttiness. Their subtle umami quality enhances their savory allure, and their intoxicating aroma infuses dishes with a unique essence. Highly prized in culinary circles, truffles are used as a finishing touch to enrich dishes, from pasta and risotto to sauces and oils.
THE ART OF TRUFFLE HUNTING:
A Timeless Tradition
Truffle hunting remains an artful and timeless tradition, captivating enthusiasts, and culinary professionals alike.
Traditionally a truffle hunter would venture into the forest accompanied by a prized pig, known for their truffle – finding prowess.
The true skill lay in preventing the pigs from consuming the precious truffles they uncovered. In modern times specially trained dogs take centre stage, showcasing their remarkable ability to detect truffle scents beneath the earth’s surface. The hunt begins by venturing into the truffière during the winter, where the handler signals to the dog to carefully unearth these treasures.
Found just below the surface, near tree roots, truffles are then meticulously cleaned and prepared for sale, gracing the tables of high-end restaurants and gourmet markets worldwide.

Mastering the Art of Truffle Hound Training
Our journey to becoming a “trufficulteur,” or a master producer of black truffles, began in 2021 and required four years of patience, before the first truffles emerged. During this time, our two splendid English Pointers, Charlie and Boogie, were diligently honing their skills to unearth these elusive treasures.
The wait is over and and the “Black Diamonds” of the culinary world have arrived. We now have the pleasure of welcoming guests to our farm, to discover truffles through a range of immersive truffle experiences as well as witnessing our truffles gracing the plates of Australia’s vibrant restaurant scene. Â
