Ingredients

  • 1 Fresh Black Truffle
  • 1 Sheet Paper Towel
  • 1 Airtight glass or BPA-free plastic container
  • Refrigerator

Instructions

  • Leave the truffle whole. Whole truffles retain their aroma and moisture far better than sliced or grated truffles.
Wrap in paper towel. Gently wrap each truffle in a clean, dry paper towel. The paper towel absorbs excess moisture, helping to prevent spoilage.
Place in an airtight container. Store the wrapped truffle in an airtight container to minimise moisture loss and prevent the aroma from transferring to other foods in your refrigerator.
Refrigerate immediately. Keep the container in the main section of your refrigerator at approximately 2–4°C.
Avoid the vegetable crisper, where humidity is often higher.
Change the paper towel daily. Fresh truffles naturally release moisture. Replace the paper towel each day to keep the truffle dry and reduce the risk of mould.
Use as soon as possible. For the very best flavour and aroma, enjoy your truffle within 7 days of harvest. Although it may remain usable for a little longer, its aroma gradually diminishes each day.

  • Never store fresh truffles in water.
  • Avoid storing truffles in rice. While rice absorbs moisture, it also draws moisture from the truffle itself, causing it to dry out more quickly.
  • Freeze only if you cannot use your truffle within a week. Whole truffles can be frozen in an airtight container and grated directly from frozen.
  • Handle truffles gently and clean them only when you're ready to use them, unless they have already been professionally cleaned.

FFREQUENTLY ASKED QUESTIONS ABOUT STORING FRESH BLACK TRUFFLES

FAQ 1: How long do fresh black truffles last?

Fresh black truffles are best enjoyed within 7 days of harvest. Their aroma is strongest during the first few days and gradually declines over time.

FAQ 2: Should I store truffles with eggs or butter?

Fresh truffles naturally infuse foods such as eggs, butter and cheese with their aroma. If you plan to make truffle butter or truffle-infused eggs, place them together in a sealed container for 24–72 hours. Keep in mind that this transfers some aroma from the truffle into the food.

FAQ 3: Can I freeze fresh truffles?

Yes. If you won’t use your truffle within a week, freezing is an excellent option. Freeze the truffle whole in an airtight container and grate it while still frozen whenever needed. Microplane directlty from a frozen state, don’t defrost.

FAQ 4: Why do I need to change the paper towel every day?

Truffles naturally release moisture during storage. Changing the paper towel daily helps keep the truffle dry, reducing the chance of mould and extending its quality.

FAQ 5: Do fresh truffles continue to ripen after harvest?

No. Unlike many fruits, truffles do not continue to ripen after they are harvested. Their quality slowly declines from the moment they are dug, making prompt use and correct storage essential.
