Ingredients
- 6 large Eggs (Cold) If possible use truffle infused eggs. Jump to truffle infused egg recipe.
- 30 ml Cream
- 2 knobs Butter
- 1 pinch Sea Salt
- 2 Slices Ciabatta or Sour Dough Bread
Instructions
- The secret to a great scrambled egg is to never overcook, to prevent seperation. Crack the cold eggs into a cold non stick pan and add a generous pinch of sea salt and a couple of knobs of butter. Put on heat and start stirring with a spatula to break up the eggs. (never whisk, it turns the mixture grainy). Continue stirring over the heat for 60 secs, lifting and folding the mixture from sides and bottom of pan. Take the pan off the heat an continue to stir and fold for another 30secs, utilising the residual heat in the pan. Put back on a really low heat for another 30 seconds, continually folding, until the mixture has just begun to set and become silky in texture. Take off the heat and to stop the eggs from overcooking add 30 mls of cream and fold in. Spoon the soft scramble onto thick slices of toasted sourdough or ciabatta.Finish with a twist of freshly ground black pepper and generous shavings of Scotch Hill Fresh Black Truffle, allowing the aroma to rise as the heat meets the truffle.
